Description
Since 1889, when the resourceful pizzaiolo Ralph Esposito invented the pizza honoring the royal family's colors (red - tomatoes, white - mozzarella, green - basil), the best pizza dedicated to Margherita of Savoy is baked right in Naples.
Ingredients
- Wheat Flour - 63.5 oz
- Salt - 1.8 oz
- Water - 1 qt
- Canned Tomatoes (Pelati) - 2.5 oz
- Pizza Mozzarella Cheese - 3.5 oz
- Olive Oil - 0 fl oz
Step by Step guide
Step 1
Knead the flour, salt, and water for 10–20 minutes.
Step 2
Let the dough rise for 2 hours.
Step 3
Divide it into portions of 180–250 grams.
Step 4
Let it rise again for 4–6 hours.
Step 5
Bake at 485 degrees Fahrenheit for about 1 minute (the thickness of the dough in the center should not exceed 0.4 cm, and 2 cm at the edges).
Step 6
For the topping, use 70 grams of tomatoes, 100 grams of buffalo mozzarella, and 4–5 grams of olive oil.
