Ingredients
- Beef - 26.5 oz
- Semi-Smoked Sausage - 6 pieces
- Baking Tomatoes - 5 lbs
- Olive Oil - 4 tablespoons
- Garlic - 2 cloves
- Green Tagliatelle Pasta - 21.2 oz
- Apple Wine - 8 fl oz
- Chopped Sage Leaves - 0.7 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the beef into 6-12 pieces.
Step 2
Clean and pound the pieces of beef well, placing chopped parsley, a piece of bacon, a bit of minced garlic, salt, and pepper on each piece. Roll them up and secure with wooden toothpicks.
Step 3
Heat olive oil in a skillet. Add the rolls and brown them on all sides. Pour in a glass of white wine. Once it evaporates, add the peeled tomatoes to the skillet and let it simmer on low heat with the lid on for about 2 hours, until the meat is tender. Season the stew with salt and pepper.
Step 4
Cook the rigatoni until al dente (slightly firm), drain the water, and mix with the sauce and meat.
