Ingredients
- Salt - to taste
- Ground Black Pepper - to taste
- Green Beans - 15.9 oz
- Anchovy fillets - 3 pieces
- Lemon Zest - 2 tablespoons
- Lemon Juice - 2 tablespoons
- Dijon Mustard - 1 teaspoon
- Shallot - 1 piece
- Capers - 1 tablespoon
- Canned tuna in olive oil - 14.1 oz
- Parsley leaves - 2.5 oz
- Tomatoes - 3 pieces
- Chicken Eggs - 4 pieces
- Olives - 7.1 oz
Step by Step guide
Step 1
Pour the farro into a saucepan with enough water to cover the grains by 2 cm. Generously salt and bring to a boil, then reduce the heat so that the water simmers gently.
Step 2
Cook the farro for 20-30 minutes, stirring occasionally, until the grains are tender but not mushy.
Step 3
Add more water if necessary. If there is excess water after cooking, drain it.
Step 4
Meanwhile, in another small pot, bring salted water to a boil, add the green beans, and cook for 2 minutes, then transfer to an ice bath or rinse under cold running water to cool the beans.
Step 5
In a blender, combine the olive oil, lemon zest and juice, mustard, shallot, and capers. Chop the tuna and parsley, and add them to the dressing. If the mixture is too thick, add lemon juice, olive oil, or water. Season with salt and pepper to taste.
Step 6
Mix the farro with half of the dressing, taste, and adjust the seasoning as needed.
Step 7
Arrange the green beans, tomatoes, eggs, and olives around the farro on a plate. Drizzle with the remaining dressing and serve.
