Nimbu Chawal (Lemon Rice)

Ingredients

  • Basmati rice - 5.3 oz
  • Raisins - 2.1 oz
  • Yellow Mustard Seeds - 1 teaspoon
  • Curry - 1 piece
  • Toasted Cumin Seeds - 1 teaspoon
  • Meyer Lemon Juice - 1 fl oz
  • Citrus Zest Mix - 1 piece
  • Cinnamon - 1 piece
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Ghee - 1.1 oz
  • Turmeric - 1 teaspoon

Step by Step guide

Step 1

First, heat all the seeds in the ghee until the mustard seeds start to pop (it's quite amusing and aromatic). After that, you can start frying the rice. (For this dish, it is better to use ghee, but you can also substitute it with any other oil.)

Step 2

Add the rice to the spices and fry until the grains become translucent (this is necessary for the rice to be fluffy. In general, if you always do this before boiling, any type of rice will be fluffy in the finished dish. If the rice you chose tends to become mushy during regular cooking, you should not skimp on the oil and fry it well in it.

Step 3

Add the turmeric, which I really love, and mix it well into the rice.

Step 4

I really enjoy the combination of rice and raisins, so I added them too.

Step 5

Lemon zest pairs very well with rice, so it is essential to include it!

Step 6

Pour in enough water so that 2/3 of the pot is filled with rice and 1/3 above the rice is water... uh, about one and a half centimeters of water should cover our rice. There! Close the lid and wait for the culinary fairies to make your rice the most delicious. This will take about 15-20 minutes.

Step 7

We must not forget to add the lemon juice to our dish just before the end. Turn off the heat. Along with the juice, we need to season everything well with salt, carefully mix it all together to avoid crushing the rice grains, and let it sit for a couple of minutes under the lid.

Step 8

All done! You can add fresh parsley, and it will be soooo delicious!
