Ingredients
- Scallions - 6 stalks
- Cilantro - a pinch
- Soy Sauce - 1 tablespoon
- Lime - 2 pieces
- Sesame Oil - 1 tablespoon
- Safflower Oil - 3 fl oz
- Rice Noodles - 5.3 oz
- Mango - 2 pieces
- Grated Ginger Root - 0.5 oz
- Mint Leaves - a pinch
- Ground Black Pepper - to taste
- Sesame bun - 3 spoons
- Mango - 6.2 oz
- Honey - 2 spoons
Step by Step guide
Step 1
Peel the mango and cut it into long, thin strips. Mix it with the lengthwise cut sugar snap peas, very thin strips of green onion, and cooked noodles.
Step 2
Prepare the dressing: blend lime juice and zest, honey, grated ginger, and soy sauce in a blender, then add cilantro and mint, and blend until smooth.
Step 3
With the blender still running, gradually pour in the sunflower oil, then mix in the sesame oil into the finished emulsion.
Step 4
Dress the salad, season with freshly ground pepper, and serve, sprinkled with toasted sesame seeds.
