Ingredients
- Rice Noodles - 3.9 oz
- Dried Chinese mushrooms - 0.7 oz
- Peanut Butter - 2 tablespoons
- Onion - 1 head
- Garlic - 1 clove
- Eggplants - 2.8 oz
- Ginger - 1 teaspoon
- Red Curry Powder - 1 teaspoon
- Cauliflower - 1.8 oz
- Broccoli - 1.8 oz
- Orange Bell Peppers - ½ g
- Sweet Corn Sticks - 1 piece
- Salt - ½ teaspoon
- Scallions - 1 piece
- Soy Sauce - 1½ tablespoons
- Medium-dry sherry - 2 tablespoons
Step by Step guide
Step 1
Soak the mushrooms in boiling water for 30 minutes. Drain the water (reserve 2 tablespoons), squeeze the mushrooms thoroughly, and slice them into thin strips. In a large skillet, heat the oil, add the mushrooms, onion (4 green tops), garlic, grated ginger, eggplant, and cook over medium heat for 15 minutes, stirring occasionally.
Step 2
Place the noodles in a bowl, pour boiling water over them, and let them sit for 10 minutes. Add curry, cauliflower, broccoli, pepper, corn, and salt to the skillet. Cook for 5 minutes.
Step 3
Drain the water from the noodles and add them along with the green onion to the vegetables. Mix well and season the dish with the reserved mushroom broth, soy sauce, and sherry. Mix again and serve immediately.
