Ingredients
- Tofu - 10.6 oz
- Rice Noodles - 14.1 oz
- Red Curry Powder - 1 tablespoon
- Ground ancho chili pepper - 1 piece
- Peanut Sprouts - 7.1 oz
- Parsley - to taste
- Coconut Milk - 5 fl oz
Step by Step guide
Step 1
Cut the tofu into cubes, dry on a paper towel, then lightly brown in peanut or sesame oil.
Step 2
Soak the rice noodles in hot water. Once they become soft, drain them in a colander.
Step 3
Add the tofu, curry powder, and dried chili pepper pods to the boiling coconut milk; stir and cook for a few minutes.
Step 4
Add the noodles and soybean sprouts; cook for 2-3 minutes. Sprinkle with parsley.
