Description
You can substitute mussels for the langoustines. They are cheaper but just as delicious. Use the liquid they were cooked in instead of fish stock, and clean them before adding to the dish. Large shrimp can be replaced with langoustines.
Ingredients
- Paprika - 1 teaspoon
- Saffron - a pinch
- Garlic - 2 cloves
- Tomatoes - 4 pieces
- Olive Oil - 6 fl oz
- Tiger shrimp in brine - 6 pieces
- Cod fillet - 14.1 oz
- Salt - to taste
- Shrimp - 1.1 oz
Step by Step guide
Step 1
Clean the shrimp, keeping the heads and shells. Remove the bones from the fish, but do not discard them.
Step 2
Pour 1.75 ml of water into a pot, add the shrimp shells and fish bones with a pinch of salt, and bring to a boil. Reduce the heat and simmer for 20 minutes. Remove from heat, let cool, and strain the broth into a bowl.
Step 3
Heat the oil in a paella pan or fireproof ceramic dish. Add the langoustines or shrimp and cook for a few minutes, then add the tails of the cleaned shrimp and the fish. Cook for a few minutes, then transfer to a plate and set aside.
Step 4
In another pan, heat the oil and sauté the tomatoes with the garlic for 5 minutes. Add the paprika and saffron and cook for another 10 minutes.
Step 5
Cook the noodles in 1.5 liters of broth.
Step 6
On a serving platter, place the noodles, topped with the tomato sauce and seafood.
