Ingredients
- Avocado - 2 pieces
- Spinach - 2.6 oz
- Lime Juice - ¼ cup
- Olive Oil - 2 tablespoons
- Garlic - 1 clove
- Salt - 1 teaspoon
- Ground Black Pepper - ¼ teaspoon
- Wheat Flour - 13.1 oz
- Chicken Broth - ½ cup
- Peeled Cooked Shrimp - 14.1 oz
- Cilantro - 2 tablespoons
Step by Step guide
Step 1
Mix the avocado pieces, spinach, 2 tablespoons of lime juice, 1 tablespoon of olive oil, garlic, ¾ teaspoon of salt, and black pepper. Blend until smooth. Set aside.
Step 2
Cook the pasta. Before draining the liquid through a colander, reserve ½ cup in a separate container.
Step 3
In a skillet, heat 1 tablespoon of olive oil for 2 minutes. Arrange the shrimp in a single layer, season with salt, and sauté for 2 minutes. Stir, trying to flip the shrimp to cook evenly. Cook for another minute and remove from heat.
Step 4
Add 2 tablespoons of lime juice and 2 tablespoons of ground cilantro to the shrimp and mix.
Step 5
Transfer the pasta to a deep dish. Add the avocado sauce to the warm pasta. If it is too thick, add 2 tablespoons of noodle broth at a time until the desired consistency is achieved.
Step 6
Top with shrimp and enjoy your delicious dish.
