- Dry yeast - 1.1 oz
- Milk - 1 fl oz
- Ocean salt - 0.7 oz
- Vegetable Oil - 11 fl oz
- Garlic - 0.9 oz
- Rice Vinegar for Sushi - 1 fl oz
- Baking Powder - 0.4 oz
- Whole egg - 2 pieces
- Olive Oil - 3 fl oz
- Anchovies - 1.1 oz
- Capers - 1.1 oz
- Parmesan Cheese - 1.1 oz
- Dijon Mustard - 0.7 oz
- Salt - to taste
- Lemon - 1 piece
Step by Step guide
Step 1
Thoroughly rinse the nutria carcass. Using a sharp carving knife, carefully follow the contours of the bones to remove the meat, just as you would with rabbit or chicken.
Step 2
Place the meat in the freezer for 15-20 minutes until it is very cold, as this will give the minced meat a better texture.
Step 3
Grind the meat of the nutria once, season with salt and pepper. Shape into patties weighing about 200 grams and refrigerate.
Step 4
Prepare the steamed buns: mix all the dry ingredients and add the liquid ingredients (at room temperature). Knead the dough until it becomes smooth and elastic, and no longer sticks to the work surface.
Step 5
Refrigerate the dough for 24 hours. After that, shape the cold dough into 70g rolls and let them rise in a warm place until they triple in size. Steam bake at 212°F for 25 minutes.
Step 6
Prepare the classic Caesar dressing: mash anchovies, capers, garlic (10 g), and cheese in a mortar with olive oil. Whisk the egg yolks with the anchovy mixture and mustard. While stirring the yolks, gradually drizzle in the vegetable oil (300 ml). Finally, add salt and lemon juice.
Step 7
Preheat the grill or skillet to 200-482°F (about 400-480 degrees Fahrenheit) and cook the nutria patties for 2 minutes on each side. The patties should develop a crispy "caramelized" crust, while the meat inside should remain pink and juicy (some might refer to this doneness as medium well).
Step 8
Slice the bun in half and spread a small amount of Caesar dressing on both sides. Place the patty in the middle, then add a leaf of iceberg lettuce on top of the patty along with a few slices of freshly salted cucumber.
