Nutritious vegetable salad with tuna

Ingredients

  • Cucumbers - 2 pieces
  • Tomatoes - 1 piece
  • Canned Baby Beets - 8.8 oz
  • Canned Mackerel in Oil - 1 can
  • Onion - 1 head
  • Meyer Lemon Juice - 0 fl oz
  • Olive Oil - 2 tablespoons
  • Italian chopped parsley - to taste
  • Orange Bell Peppers - 1 piece

Step by Step guide

Step 1

Wash the cucumbers, cut them in half, and slice them. Also wash the tomatoes and cut them in half if they are small, or into quarters if they are large.

Step 2

Drain the liquid from the canned beans and place them in a salad bowl. Top the beans with the sliced cucumbers and tomatoes.

Step 3

Break the tuna into large pieces with a fork and place it on top of the vegetables. Garnish the salad with sliced rings of sweet onion.

Step 4

Drizzle the salad with lemon juice and olive oil. Add some herbs to taste.
