Oatmeal Tabouli Salad
Ingredients
- Oat flakes - ½ cup
- Water - 1 cup
- Lemon Juice - ¼ cup
- Extra virgin olive oil - ¼ cup
- Roasted cumin (zira) - ½ teaspoon
- Chopped Parsley - 2.5 oz
- Onion - 1 head
- Tomatoes - 2 pieces
- Cucumber - 1 piece
- Salt - to taste
Step by Step guide
Step 1
Pour hot water over the oat flakes, add salt to taste, and let it steep for 25-30 minutes. Drain the water through a sieve and press out excess moisture from the flakes with the back of a spoon. Transfer to a bowl.
Step 2
In a small bowl, whisk together lemon juice, salt, cumin, and olive oil. Mix with the oats and let it sit for another 20 minutes. You can cover it and refrigerate overnight.
Step 3
Add the remaining ingredients, mix well, and let it sit for 10-15 minutes. Serve at the table.
