Oatmeal with smoked beef ribs

Ingredients

  • Prunes - 7.1 oz
  • Raisins - 3.5 oz
  • Ketchup - 3.5 oz
  • Passata Tomato Sauce - 2.5 oz
  • Soy Sauce - 1 fl oz
  • Water - 1 qt
  • Natural Alder Smoke Concentrate - 0 fl oz
  • Ground Oats - 4.6 oz
  • Thick Beef Rib - 5.3 oz
  • Shallot - 0.5 oz
  • Garlic - 1 clove
  • Thyme - 1 stalk
  • Parsley - to taste
  • Olive Oil - 0 fl oz
  • Butter - 0.7 oz
  • Salt - to taste
  • Chicken Broth - 1 qt

Step by Step guide

Step 1

First, prepare the barbecue sauce. To do this, combine prunes, raisins, ketchup, tomato paste, and soy sauce with water and reduce it by almost half. Then blend it until smooth and add liquid smoke for flavor. The sauce can be stored in the refrigerator for several weeks. You will need only a small portion for the recipe.

Step 2

Pat the ribs dry and sprinkle with salt, then roast in the oven at 200°C until they develop a dark color, which will take about 15 minutes. Next, you will need barbecue sauce, which can be purchased or made from scratch.

Step 3

Place the ribs in a vacuum bag and cover them with sauce. Sous-vide can be replaced with controlled simmering, though not with the precision of a machine, but it will still work. Put the sealed bag in a pot, fill it with water, and place it in an oven preheated to 65-158°F (149-158 degrees Fahrenheit) for 20 hours. After such a long slow cooking process, the meat will be tender and juicy.

Step 4

In a saucepan, heat olive oil and briefly toast the oatmeal for a couple of minutes. Then, add the chicken broth. It's important to maintain the proportions; for one part of oatmeal, you need three parts of broth.

Step 5

Once the liquid level has equalized with the level of the oats after boiling, turn off the heat, cover with a lid, and let the grains absorb the remaining broth on their own.

Step 6

Next, heat some butter in a saucepan, and sauté finely chopped shallots and whole garlic cloves in it (there's no need to chop the garlic, as it will be easy to remove later; it's only needed for flavor).

Step 7

Add the grain mixture and gradually pour in the broth. You can also use water, but the broth will provide a richer flavor. Cooking will take 12-15 minutes, which is the time needed for the grain to be fully cooked without boiling it to the point of breaking down.

Step 8

Remove the garlic, add thyme, sprinkle with salt and pepper to taste, and remove from heat. For aroma, add finely chopped parsley. By the way, parsley has the lowest burning temperature, so it won't blacken in the dish. Add a piece of butter and mix well. The consistency of the dish should be such that it doesn’t spread on the plate but also doesn’t turn into a lump.

Step 9

Place the oatmeal base on a plate, top it with the beef ribs, and drizzle with the remaining sauce.
