Octopus with Potatoes
Ingredients
- Octopus - 1 piece
- Salad Potatoes - 2 lbs
- Onion - 1 head
- Garlic - 1 clove
- Dry White Wine - 3 fl oz
- Olive Oil - 4 fl oz
- Dried Rosemary - ½ teaspoon
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Peel the potatoes and onion, and cut them into large slices. Place them in a greased baking dish. Drizzle with oil.
Step 2
Clean the octopus and without cutting it, place it on top of the vegetables, season with herbs and salt, and drizzle with the remaining oil.
Step 3
Cover the baking dish with foil and bake in the oven at 356°F for 1 hour.
Step 4
After 1 hour, remove the foil, pour the wine over everything, and sprinkle with minced garlic. Continue cooking for another 10–15 minutes.
Step 5
Before serving, cut the octopus and arrange it on warm plates with the vegetables.
