Odjakhuri with pumpkin
Ingredients
- Pumpkin - 500 pieces
- Veal - 17.6 oz
- Onion - 1 head
- Orange Bell Peppers - ½ pieces
- Courgette - ½ pieces
- Vegetable Oil - 1 fl oz
- Cilantro - 0.4 oz
- Ground coriander - a pinch
- Thyme - a pinch
- Garlic - 3 cloves
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Peel the pumpkin, remove the seeds, and cut it into small sticks. Cut the veal into pieces of the same size.
Step 2
Heat a pan and sauté the pumpkin in vegetable oil until partially cooked. Add the meat to the pumpkin and cook over medium heat, stirring, for 3-4 minutes.
Step 3
Mince the garlic and add it to the meat and pumpkin, stir, add the onion sliced into thin half-rings, mix, and cook for another 2–3 minutes.
Step 4
Add the julienned bell pepper and zucchini to the skillet, and stir. Season with salt and pepper, then add thyme, ground coriander, and chopped cilantro. Serve topped with fresh cilantro.
