Old English Bread Sauce for Christmas Turkey
Ingredients
- Shallot - 2 pieces
- Milk - 17 fl oz
- Cayenne Pepper - to taste
- Stale Bread - 6 oz
- Ground Nutmeg - to taste
- Butter - 1.1 oz
- Salt - to taste
- 10% cream - 1 fl oz
Step by Step guide
Step 1
In a small heavy-bottomed saucepan, combine the milk with finely chopped shallots. Bring to a boil over medium heat, then reduce the heat and simmer for another 10-15 minutes until the shallots are soft. Strain through a sieve or cheesecloth to remove the shallots from the milk.
Step 2
Soak the finely chopped stale white bread or croutons in the milk and leave for 15-50 minutes depending on the staleness of the bread.
Step 3
Wait until the bread has completely softened, then mash with a fork until it reaches a creamy consistency.
Step 4
Add spices and salt to taste, whisk again with a fork, and bring to a boil over medium heat.
Step 5
Remove from heat, stir in a little rich cream, mix well, and serve warm with roasted turkey and turkey roast.
