Ingredients

  • Baking Tomatoes - 1 can
  • Olive Oil - 1 cup
  • Salted Butter - 2 tablespoons
  • Celery stalk - 1 piece
  • Onion - 1 head
  • Carrot - 1 piece
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Lean Beef - 17.6 oz
  • Pork Mince - 8.8 oz
  • Pancetta - 4.2 oz
  • Red Grape Juice - 1 cup
  • Passata Tomato Sauce - 2 tablespoons
  • Green Tagliatelle Pasta - to taste

Step by Step guide

Step 1

Peel the canned tomatoes and place them in a blender along with the juice. Blend until smooth and set aside.

Step 2

In a large heavy-bottomed skillet, heat the olive oil and butter over medium heat. Finely chop the celery, onion, and carrot. Cook the vegetables over medium heat until golden brown. Season with salt and pepper. Reduce the heat and cook, stirring, for another 15 minutes.

Step 3

Add the ground pork and beef to the skillet and cook, breaking up large chunks of meat. Sauté the meat for about 10 minutes, then add the finely chopped pancetta and continue cooking for another 10 minutes. Increase the heat and pour in the wine. Cook, stirring, until the wine evaporates. Then add the tomato paste and cook for another 2 minutes. Pour in the tomato puree, reduce the heat, and simmer until the sauce thickens. This may take up to 3 hours.

Step 4

Meanwhile, cook the pasta according to the package instructions. Season the sauce with salt and pepper. Serve the cooked pasta on plates, top with the sauce, and sprinkle with grated Parmesan cheese. Enjoy your meal!
