- Salad Potatoes - 1.1 oz
- Pickled Cauliflower - 0.7 oz
- Carrot - 0.4 oz
- Langoustines - 4 pieces
- Mayonnaise - 0.7 oz
- Quail Egg - 1 piece
- Whole egg - 1 piece
- Red Caviar - 0.2 oz
- Shallot - 0 oz
- Cucumbers - 3.5 oz
- Olive Oil - 1 fl oz
- Vegetable Oil - 1 fl oz
- Lime Juice - 0 fl oz
- Honey - 0.5 oz
- Salt - 0 oz
Step by Step guide
Step 1
Prepare the cucumber dressing: blend fresh cucumbers, olive oil, vegetable oil, honey, and lime juice in a blender. Strain through a sieve. Add salt to taste.
Step 2
Clean the langoustines and steam them.
Step 3
Dice the boiled potatoes, boiled carrots, and pickles into small cubes, season with salt, and mix with mayonnaise. Use a ring mold to place the mixture in the center of the plate.
Step 4
Place two halves of quail eggs and langoustines on top.
Step 5
Garnish with grated egg yolk and red caviar.
Step 6
Drizzle cucumber dressing around the mound of salad on the plate.
