- Salad Potatoes - 1.2 oz
- Carrot - 0.5 oz
- Pickled Cauliflower - 0.9 oz
- Salt - to taste
- Roast duck - 0.2 oz
- Shallot - 0.2 oz
- Green Peas - 0.5 oz
- Chicken Egg - 1 piece
- Quail Egg - 1 piece
- Whole egg - ½ pieces
- Mustard Greens - to taste
- Olive Oil - 0 fl oz
- Vegetable Oil - 1 fl oz
- Apple Cider Vinegar - 1 tablespoon
- Sugar - to taste
Step by Step guide
Step 1
Prepare the mayonnaise: place the egg yolks in a bowl, add salt, sugar, and mustard. Mix all the ingredients well using a mixer.
Step 2
Carefully incorporate the vegetable oil into the egg yolk mixture while simultaneously beating the mixture with a mixer. Then, repeat the same process with the olive oil.
Step 3
When the mixture thickens, add the vinegar and continue whisking until the desired consistency is reached. Place the finished mayonnaise in the refrigerator.
Step 4
Dice the boiled potatoes, boiled carrots, shallots, pickles, duck thigh fillet, and boiled chicken egg into 0.5x0.5 cm cubes. Mix with mayonnaise, then add peas, salt, and pepper to taste.
Step 5
Plate the salad using a culinary ring. Garnish with thin slices of smoked duck, chopped green onions, and a quail egg.
