Omelette with Ginger, Shallots, and Mushrooms
Ingredients
- Sesame Oil - to taste
- Peanut Oil - to taste
- Red Chili Pepper - 1 piece
- Ginger - 1 teaspoon
- Shallots - 3 heads
- Shiitake Mushrooms - 3 oz
- Chicken Eggs - 3 pieces
- Sesame Seeds - 2 teaspoons
- Kecap Manis Sauce - to taste
- Sriracha - to taste
- Cilantro - ½ bunch
Step by Step guide
Step 1
Heat 1 teaspoon of each oil in a small non-stick skillet, then add most of the red chili pepper, all the ginger, and the white parts of the shallots. Sauté for 1 minute until the ginger is almost soft, then add the mushrooms and almost all the green parts of the shallots. Sauté the mushrooms for another 1-2 minutes until golden brown.
Step 2
Mix the eggs with 1 teaspoon of sesame seeds and a pinch of salt. Lower the heat and pour in the egg mixture, stirring for 1 minute, then let it sit for 4-5 minutes until almost fully cooked. Sprinkle with the remaining sesame seeds and broil under a preheated grill until cooked through.
Step 3
Top the omelette with cilantro, remaining chili, and shallots, fold it in half, and transfer to a plate. Serve with Kecap Manis and Sriracha sauces.
