Onion and Feta Casserole
Ingredients
- Shortcrust Pastry - 17.6 oz
- Butter - 0.9 oz
- Olive Oil - to taste
- Shallots - 4 pieces
- Sugar - a pinch
- Grated Parmesan cheese - 2 tablespoons
- Chopped Parsley - 2 tablespoons
- 40% Cream - 4 fl oz
- Chicken Eggs - 2 pieces
- Feta cheese - 2.6 oz
- Egg yolks - 2 pieces
Step by Step guide
Step 1
Place the pastry in the bottom of a 20 cm springform pan. Cover with paper and fill with dry beans.
Step 2
Bake at 200°C for 15 minutes. Remove the paper and beans and bake for another 5 minutes. Melt the butter with a little vegetable oil, add the shallots.
Step 3
Stir and sauté over low heat for about 20 minutes until soft. Add sugar and increase the heat, sauté the shallots until slightly browned. Season with salt.
Step 4
Sprinkle half of the Parmesan cheese over the pastry base, then top with the shallots. Mix the parsley, cream, and eggs, then add the feta.
Step 5
Season with salt and pour over the base. Sprinkle with the remaining cheese. Bake for 20 minutes at 180°C until done.
