Description
A unique dish: these cutlets are actually two-thirds made of lightly golden fried onions, while grated potatoes and carrots merely serve as binding fillers. Despite such a modest set of ingredients, the golden cutlets look tempting and taste reminiscent of the onion soup enjoyed by the bohemians of Montmartre.
Ingredients
- Onion - 8 pieces
- Carrot - 1 piece
- Potato - 1 piece
- Vegetable Oil - to taste
- Dill - 1 bunch
- Ground Black Pepper - to taste
- Salt - to taste
- Parsley - 1 bunch
- Wheat Flour - 3 tablespoons
Step by Step guide
Step 1
Peel the onions, cut them into strips, and pour boiling water over them for 5–7 minutes.
Step 2
Drain the water and add flour to the onions.
Step 3
Chop the herbs.
Step 4
Grate the raw potato and carrot on a coarse grater.
Step 5
Add the herbs, potato, carrot, vegetable oil, salt, and spices to the onions, and mix everything together.
Step 6
Fry the cutlets like pancakes, browning them on both sides until golden brown.
Step 7
Place the finished cutlets in another pan over low heat under a lid to finish cooking (for about 20 minutes).
