Open keto pie with chanterelles
Ingredients
- Farm fresh eggs - 6 pieces
- Flaxseeds - 3.7 oz
- Unrefined Sunflower Oil - 3 fl oz
- Baking Powder - 1½ teaspoons
- Toasted Sesame - 1 tablespoon
- Flaxseeds - a pinch
- Pizza Mozzarella Cheese - 3.5 oz
- Grated Pecorino Pepato Cheese - 3 tablespoons
- Pickled Chanterelles - 8.8 oz
- Semi-soft cream cheese - 3 tablespoons
- Butter - 2 pieces
- Ocean salt - 1½ teaspoons
- Pink Himalayan Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Crack the eggs into a deep bowl, add sea salt and baking powder.
Step 2
Add flaxseed flour, olive oil, and sesame seeds.
Step 3
Knead the dough with damp hands.
Step 4
Form a round base.
Step 5
Melt the butter in a pan.
Step 6
Add the chanterelles. Sauté over high heat.
Step 7
After 2 minutes, stir and add Himalayan salt.
Step 8
After 3–4 minutes, add cream cheese, season with pepper, and stir again. Reduce heat and sauté for another 2 minutes.
Step 9
Spread grated mozzarella cheese on the pie base.
Step 10
Top with chanterelles.
Step 11
Season with nutmeg, and sprinkle the edges with sesame and flax seeds.
Step 12
Sprinkle with grated Parmesan cheese.
Step 13
Place in a preheated oven at 356°F.
Step 14
After 15 minutes, the pie is ready.

Serve cut into triangles.
