Description
Matcha and orange go well together. If mixed roughly, the matcha will oxidize and turn brown. Therefore, the drink should be carefully poured in layers. It contains birch syrup, which is natural and provides sweetness. The currant adds a fragrant aroma to the lemonade. This recipe was shared by a head barista from a local café.
Ingredients
- Matcha - 0.1 oz
- Freshly squeezed orange juice - 3 fl oz
- Birch sap - 0.7 oz
- Red Currant - 3.5 oz
- Soda water - 4 fl oz
- Ice - 100 pieces
- Water - 0 fl oz
Step by Step guide
Step 1
Add the matcha tea to the bowl, sifting it through a fine mesh to break up any large clumps of tea.
Step 2
Add 20 ml of hot water (65–158°F) to the matcha, stirring gradually.
Step 3
Whisk the tea in a W-shaped motion with a whisk or milk frother until a thick foam forms.
Step 4
Prepare the currant sauce. Rinse the currant berries, add them to a blender along with birch syrup and 70 ml of water, and blend until smooth. Strain to remove the pulp and seeds, then transfer to a saucepan and simmer over medium heat until thickened. Let cool.
Step 5
Add blackcurrant sauce to the bottom of the glass, then gently pour in freshly squeezed orange juice.
Step 6
Next, add ice and pour in the soda.
Step 7
Gradually pour the matcha over the ice at the top of the glass as a final touch.
