Orecchiette Pasta with Cauliflower
Ingredients
- Conchiglie Pasta - 17.6 oz
- Olive Oil - 3 tablespoons
- Cauliflower - 2 lbs
- Garlic - 3 cloves
- Chili Flakes - ½ teaspoon
- Anchovy fillet - 3 pieces
- Chopped Sage Leaves - ¼ cup
- Grated Pecorino Pepato Cheese - ½ cup
Step by Step guide
Step 1
Cut the cauliflower into small pieces.
Step 2
Cook the pasta in boiling water for 5 minutes, then add the cauliflower and cook until al dente for another 5 minutes. Drain, reserving 1 cup of water.
Step 3
In the same pot, heat the olive oil over medium heat. Add the minced garlic, red pepper flakes, and anchovies. Sauté, breaking up the fish, for 1 minute.
Step 4
Add the pasta, cheese, 0.5 cup of the reserved pasta water, season with salt and pepper. Allow the liquid to thicken slightly and add the parsley.
