Ingredients
- Orzo Pasta - 8.1 oz
- Shrimp - 8.1 oz
- Olive Oil - 3 fl oz
- Garlic - 1 clove
- Salt - a pinch
- Ground Black Pepper - a pinch
- Citrus Zest Mix - 2 pieces
- Meyer Lemon Juice - ¼ tablespoon
- Scallions - 4 pieces
- Fresh Mint - ½ tablespoon
- Dill - ½ tablespoon
- English cucumber - 5.3 oz
- Feta cheese - 4.2 oz
- Pitted olives - 3 tablespoons
Step by Step guide
Step 1
Preheat the oven to 446°F. In a large pot, bring salted water to a boil. Add the pasta and cook until al dente (about 2 minutes less than the package instructions). Drain the pasta in a colander and rinse under cold water; discard excess water. Transfer the pasta to a large bowl.
Step 2
Place the shrimp on a baking sheet and toss with 50 ml of olive oil, garlic, salt, and pepper to taste. Put the baking sheet in the oven and roast the shrimp, stirring occasionally, until the meat turns white, about 2–3 minutes.
Step 3
Add the shrimp to the bowl with the pasta. Chop the green onion, mint, dill, cucumber, cheese, and olives. Toss together, add lemon juice, zest, and the remaining 50 ml of olive oil; mix well. Serve the salad at room temperature.
