Orzo pasta, also known as risoni, resembles rice in shape — it looks like small, elongated grains. In this recipe, it is cooked just like rice — until it fully absorbs the liquid. Cheese adds a creaminess to the dish that pairs wonderfully with the pasta. The result is a deceptive dish: it looks like pilaf, even though there's no rice in it. The essence is the same — it's a hearty and very filling meal.

- Carrot - 6 oz
- Butter - 1.1 oz
- Orzo Pasta - 8.1 oz
- Garlic - 1 clove
- Chicken Broth - 10 fl oz
- Scallions - 0.7 oz
- Grated Pecorino Pepato Cheese - 1.4 oz
- Fresh Rose Hips - 0.7 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Finely chop the carrot (or, for example, you can pulse it in a food processor until it resembles coarse crumbs, which is quicker) and add it along with the orzo pasta to a saucepan with melted butter.
Step 2
Sauté the pasta and carrots for five minutes, stirring with a spatula, then pour in one and a half cups of water and broth, and add the crushed garlic. Cook uncovered, stirring occasionally, for ten minutes, until the liquid is fully absorbed by the pasta.
Step 3
Add grated Parmesan cheese and chopped onion with rosemary, and gently mix. Season with salt and pepper to taste.
