Osso Buco Milanese

Ingredients

  • Beef Shank - 2 lbs
  • Wheat Flour - 7.1 oz
  • Celery salt - 3 stalks
  • Turnips - 2 pieces
  • Spanish onions - 2 pieces
  • Parsley - 1.1 oz
  • Garlic - 2 cloves
  • Lemon - 1 piece
  • Apple Wine - 3 fl oz
  • Butter - 1.1 oz
  • Vegetable Oil - 3 tablespoons

Step by Step guide

Step 1

Chop the onions and celery into medium cubes, and cut the carrots into medium sticks.

Step 2

Dredge the meat in flour on both sides and fry in a mixture of butter and vegetable oil until golden brown on both sides.

Step 3

Repeat this with all pieces of meat. Season with salt and pepper to taste and place in a large pot along with several marrow bones. Pour in boiling water so that the top piece is half exposed. Immediately place on the heat.

Step 4

While the water is boiling, sequentially sauté the vegetables. Lightly sauté the carrots until they are slightly browned, then add the celery. Sauté for 2-3 minutes, then add the onions. To the sautéed vegetables, add the main ingredient — white wine. Let the alcohol evaporate over high heat. Add the vegetables to the meat and simmer on low heat for 2.5 hours, periodically adding water as needed.

Step 5

An important part of Osso Buco Milanese is the gremolata seasoning. It is best to prepare it just before serving, as the zest quickly loses its aroma. Finely chop the garlic. Separate the parsley leaves from the stems and chop them finely as well. Add the zest of half a lemon to the garlic and parsley. Optionally, you can season the gremolata with a pinch of salt.
