Ingredients
- Eye muscle - 3 lbs
- Butter - 1.1 oz
- Vegetable Oil - 2 fl oz
- Carrot - 1 piece
- Onion - 1 head
- Celery stalk - 2 pieces
- Garlic - 6 cloves
- Thyme - 3 sprigs
- Rosemary - 2 sprigs
- Olive Oil - 0 fl oz
- Dijon Mustard - 1 tablespoon
- Honey - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Season the meat with salt and pepper, stuff it with halved garlic cloves, tie it tightly with kitchen twine, and sear it on all sides in a mixture of butter and vegetable oil until golden brown.
Step 2
Place the meat on a baking sheet, brush it with vegetable oil, and add coarsely chopped onions, carrots, and celery stalks, along with thyme and rosemary. Transfer to an oven preheated to 320°F (320 degrees Fahrenheit) and bake for 1.5 to 2 hours.
Step 3
Mix the mustard with olive oil and honey, generously coat the meat with this mixture, raise the oven temperature to 347°F, and leave the meat in there for another 15–20 minutes.
Step 4
Serve hot, and mashed potatoes or vegetable stew make an excellent side dish. If there's any meat left, it can be sliced thinly to make sandwiches.
