Ingredients
- Poultry - 1½ kg
- Water - 2 qt
- Salt - 3.5 oz
- Sugar - 4.2 oz
- Thyme - to taste
- Garlic - 2 heads
- Green peppercorns - 2 pieces
- Citrus Zest Mix - to taste
- Vegetable Oil - 5 fl oz
- Butter - 3.5 oz
- Lemon - 1 piece
Step by Step guide
Step 1
Prepare a brine solution. To do this, mix water with salt at a ratio of 50 g per 1 liter of water, add sugar, thyme, 2 heads of garlic (cut in half), coarsely chopped green pepper, and the zest of 1 lemon. Season with pepper, bring to a boil, and then let it cool.
Step 2
Submerge the whole chicken in the solution and leave it in the refrigerator for 4 hours.
Step 3
Remove the chicken and pat it dry with paper towels.
Step 4
Tie the chicken with twine or string, pressing the wings against the body and crossing the legs. Place the chicken in the refrigerator to dry out for 8 hours.
Step 5
Place a lemon inside the chicken. Prepare the side dish, which can be any vegetables. Chop them and arrange them in a baking tray. Place the chicken on top.
Step 6
Drizzle the chicken with vegetable oil and rub the oil into the skin with your hands.
Step 7
Place the chicken in an oven preheated to 356°F (350 degrees Fahrenheit) for 40 minutes. Then increase the temperature to 392°F (400 degrees Fahrenheit). After 10 minutes, brush the chicken with melted butter and leave it in the oven for another 10 minutes.
