Ingredients
- Pork Neck - 2 lbs
- Onion - 3 heads
- Lemon - ½ pieces
- Vegetable Oil - 3 fl oz
- Adjika - 2 spoons
- Smoked salt - 1 tablespoon
- Allspice berries - 1 tablespoon
- Salt - to taste
Step by Step guide
Step 1
For the marinade, crush the allspice berries in a mortar, then add adjika, smoked paprika, and salt. Pour in about 1/3 cup of oil and mix the marinade thoroughly with a fork.
Step 2
Cut the meat into pieces of 3–4 cm. It's important that the pieces are of uniform size, so the skewers will cook evenly.
Step 3
Add the marinade to the meat and mix it thoroughly by hand to ensure the spices are evenly distributed.
Step 4
Slice the onion into thin rings, place it in a large bowl, and firmly crush it with your hands to release its juices. Add the meat to the onion, squeeze in some lemon juice, and cut the remaining lemon peel into pieces. Mix the meat with the onion and lemon remnants using your hands, and let it marinate in the refrigerator for at least 4 hours, preferably overnight.
Step 5
Skewers are unlikely to fit in the oven, so it's best to use wooden skewers that have been soaked in water beforehand to prevent them from burning. You can also use metal skewers, which are often included in barbecue sets.
Step 6
Remove any stuck pieces of marinade from the meat and thread the pieces onto skewers, leaving space on the sides. The skewers should be long enough to rest across the edges of the pan without falling down.
Step 7
Remove the lemon pieces from the marinade, squeeze the onion with your hands to drain the juice, and transfer the onion to a baking dish.
Step 8
Place the skewered kebabs on top of the onions in the baking dish.
Step 9
Preheat the oven to around 464°F (about 475 degrees Fahrenheit), but if your oven allows, you can set it even higher. Place the dish with the onions and skewers in the oven for about 30 minutes. To mimic the grilling process, turn the skewers occasionally. At a minimum, do this twice during the 30 minutes, but it's better to turn them every 10 minutes.
Step 10
Remove the baking sheet from the oven, lifting the skewers above the bed of onions, resting the edges of the skewers on the sides to create a grilling effect. Brush the skewers with vegetable oil. Return the entire setup to the oven in the baking dish for another 7-10 minutes. If your oven has a grill function, turn it on. Take the skewers out of the oven; do not discard the onions—they are very tasty. For serving, prepare fresh herbs, green onions, cucumbers, and tomatoes.
