Description

First, don't use just any cheese; spicy cheddar pairs best with potatoes. Second, 20–30 minutes before it's done, sprinkle the potatoes with grated mozzarella. While mozzarella isn't as bold in flavor as cheddar, it has the perfect stretchy texture and will give the potato wedges a golden crust.
Ingredients
- Potato - 1¼ kg
- Milk - 5 fl oz
- 33% Cream - 8 fl oz
- Thyme - 4 sprigs
- Garlic - 2 cloves
- Cheshire Cheese - 7.1 oz
- Melted Cheese - 3.5 oz
- Salt - ¾ spoons
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel the potatoes and cut them into cubes approximately 2 cm on each side.
Step 2
Chop the garlic and remove the leaves from the thyme sprigs.
Step 3
Grate the cheddar cheese using a coarse grater.
Step 4
Combine the potatoes with the garlic, thyme, cheddar cheese, and the remaining ingredients, excluding the mozzarella. Mix well.
Step 5
Transfer the potatoes to a baking dish, cover with foil, and place in the oven preheated to 356°F for one hour.
Step 6
Grate the mozzarella cheese using a coarse grater.
Step 7
After an hour, remove the foil and evenly sprinkle the contents of the dish with grated mozzarella. Return the potatoes to the oven for another 25 minutes or until the mozzarella is golden brown.
