Oven-Baked Tuscan Chicken

Ingredients

  • Poultry - 1 piece
  • Parsley - 1 bunch
  • Carrot - 1 piece
  • Onion - 1 head
  • Rosemary - 1 stem
  • Garlic - 2 cloves
  • Chopped Sage Leaves - 2 pieces
  • Apple Wine - 7 fl oz
  • Bay leaf - 2 pieces
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Olive Oil - 3 tablespoons

Step by Step guide

Step 1

Wash the chicken, pat it dry with a paper towel, and stuff it with chopped onion and carrot, rosemary, bay leaves, sage, and 1 clove of garlic cut in half.

Step 2

Prepare the marinade: finely chop the garlic, mix it with wine, olive oil, salt, and pepper.

Step 3

Line the baking dish with 2-3 layers of foil, ensuring the edges extend beyond the dish so that you can cover the chicken with them.

Step 4

Rub the chicken with the marinade and pour the remainder inside, then place it in the dish breast side up and wrap it with the edges of the foil.

Step 5

Refrigerate for 2-3 hours.

Step 6

Preheat the oven to 392°F (about 400 degrees Fahrenheit), place the chicken in the middle, and bake for 40-45 minutes. Then, carefully open the top of the foil to allow the breast to brown and leave it for another 15-20 minutes, basting the breast with the chicken juices if necessary.

Step 7

Cooking time and temperature may vary depending on the size and quality of the chicken, as well as the type of oven. Monitor to ensure the chicken does not dry out while also browning on top and cooking through.

Step 8

Remove the cooked chicken from the oven, carve it into 4 portions, and sprinkle with chopped parsley.

Step 9

Polenta (cornmeal cake) and a glass of light wine are recommended as a side dish.
