Description
For a colorful presentation, you can use a variety of bell peppers and – if available – purple onion instead of the regular one. Fresh thyme can be replaced with dried herbs (for example, a mixture of dried oregano and thyme).

- Tomatoes - 1 piece
- Courgette - 1 piece
- Orange Bell Peppers - 3 pieces
- Onion - 1 piece
- Garlic - 1 clove
- Thyme - 1 sprig
- Vegetable Oil - 3 tablespoons
- Salt - a pinch
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
Clean the bell peppers and cut them into large cubes.
Step 3
Cut the tomato into large half-moon slices.
Step 4
Slice the onion into small half-moon slices.
Step 5
Cut the zucchini into thin slices.
Step 6
Peel the garlic and lightly crush it with the side of a knife.
Step 7
Place all the vegetables in a baking dish. Add vegetable oil, herbs, salt, and mix well.
Step 8
Bake for 20–30 minutes covered, then another 15 minutes uncovered. The time is approximate – check that the vegetables are tender.
