Description
A simple and dearly loved recipe where the goose is first marinated in orange juice with Eastern spices and then baked in the oven. Note the use of foil—it will keep the goose juicy.
Ingredients
- Goose fat - 6 lbs
- Salt - 0.5 oz
- Ginger - 1.4 oz
- Garlic - 5 cloves
- Star anise - 2 pieces
- Ground Cinnamon - 1 tablespoon
- Green peppercorns - 2 spoons
- Oranges - 2 pieces
- Sugar - 0.5 oz
Step by Step guide

Prepare all the ingredients.
Step 2
Grind black pepper and star anise in a mortar and pestle or a coffee grinder.
Step 3
Grate the ginger root on a fine grater.
Step 4
Mix the ground spices, salt, ginger, garlic pressed through a garlic press, and orange zest until a smooth paste forms. If needed, add a little vegetable oil.

Rub the goose with a spiced paste, both inside and out.

Wrap the goose in plastic wrap and refrigerate to marinate for 8 hours.

Preheat the oven to 356°F. Remove the goose from its packaging, place it in a deep roasting pan, cover with foil, and put it in the oven for 2 hours.

Juice the oranges and reduce the juice with sugar by half in a small saucepan.
Step 9
Remove the foil from the roasting pan, brush the goose with orange juice, and continue roasting for another hour, basting it occasionally with the juice or rendered fat from the pan.

Serve the cooked goose at the festive table.
