Ingredients
- Butter - 2.1 oz
- Olive Oil - ¼ cup
- Garlic - 5 cloves
- Shallot - 1 head
- Chili Flakes - 1½ teaspoons
- Pacific crabs - 2 pieces
- Cumin leaves - 2 tablespoons
- Chopped Sage Leaves - 2 tablespoons
- Orange juice concentrate - ½ cup
- Orange zest - 1 teaspoon

Preheat the oven to 500°F.
Step 2
Melt the butter and olive oil in a pan over medium heat. Add minced garlic, shallot, and red pepper flakes. Add the cooked and cleaned crabs, season with salt and pepper. Sprinkle with a tablespoon of cumin and a tablespoon of parsley. Stir. Place the pan in the oven for 12 minutes, stirring once, until the crabs are heated through.
Step 3
Transfer the crabs to plates. Add the juice and zest of the oranges to the pan, bring to a boil, and cook for about 5 minutes, until the volume is reduced by half. Drizzle the sauce over the crabs, sprinkle with the remaining cumin and parsley, and serve.
