Oven-Roasted Xi'an Style Chicken Wings
Ingredients
- Cilantro - ½ cup
- Duck wings - 4 lbs
- Baking Powder - 1 tablespoon
- Salt - ½ tablespoon
- Toasted Cumin Seeds - 1 teaspoon
- Fennel - 1 teaspoon
- Dried Chili Pepper - 1 tablespoon
- Mild Chili Spice - 1 tablespoon
- Brown Sugar - 1 tablespoon
- Vegetable Oil - 2 teaspoons
- Scallions - to taste
Step by Step guide
Step 1
Line a baking sheet with foil and set aside. Use a paper towel to dry the chicken wings. Place 1/3 of them in a bowl, sprinkle with 1 teaspoon of baking powder and 1 teaspoon of salt, and mix well. Arrange on the baking sheet. Repeat with the remaining chicken.
Step 2
Place the chicken wings in the refrigerator for 8-18 hours, uncovered.
Step 3
Position the rack in the middle and preheat the oven to 392°F. Bake the wings for about 20 minutes. Flip them over and continue cooking for another 15-20 minutes until golden brown.
Step 4
Meanwhile, mix the cumin, fennel, and chopped pepper and sauté for one minute. Place in a mortar. Add sugar and salt and grind into a powder.
Step 5
When the wings are ready, transfer them to a large bowl and mix with the oil. Add half of the spices, green onion, and cilantro. Mix well. Taste one wing and add spices to your liking. Serve hot. Enjoy your meal!
