- Paccheri Pasta - 3.5 oz
- Shallot - 0.4 oz
- Garlic - 0.1 oz
- Olive Oil - 1 fl oz
- Black Beluga Lentils - 3.5 oz
- Truffle Oil - 0 fl oz
- Chicken Broth - 3 fl oz
- Black Bean Paste - 0.7 oz
- Parsley - 0.1 oz
- Foie Gras - 1.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Make a puree from half of the pre-cooked lentils by blending them with olive oil.
Step 2
Cook the paccheri until al dente.
Step 3
In a skillet, sauté the garlic and shallot, then add the lentil puree and chicken broth.
Step 4
Combine the paccheri with the sauce, add the lentils and truffle paste, and simmer in the sauce, then add parsley.
Step 5
Plate the pasta. Top with seared foie gras steaks. Drizzle with olive oil and truffle oil.
