Ingredients
- Skin-On Chicken Breasts - 14.1 oz
- Spanish onions - 1.2 oz

- Passata Tomato Sauce - 1 tablespoon
- Olive Oil - 1 tablespoon
- Ocean salt - to taste
- Ground Black Pepper - to taste
- Mayonnaise - 1 tablespoon
- Dijon Mustard - 1 tablespoon
- Mild Chili Spice - to taste
- Grated Pecorino Pepato Cheese - 1½ tablespoons
Step by Step guide
Step 1
Heat the oil in a skillet over high heat.
Step 2
Slice the onion.
Step 3
Add the onion to the skillet and sauté for 1–2 minutes.
Step 4
Stir the onion and reduce the heat to medium.
Step 5
Add the tomato paste to the onion. Stir.
Step 6
After 1 minute, place the chicken breast in the skillet and sauté for 3–4 minutes.

Season with salt.

Season with pepper.

For the sauce, mix the mayonnaise and mustard.

Flip the chicken and top it with the sautéed onion.

Sprinkle with grated Parmesan cheese. Reduce the heat slightly.

Cover and simmer for another 7–8 minutes.

Transfer to a plate and serve with the sauce.
