Panzanella with Sweet Tomatoes
Ingredients
- Tomatoes - 2 pieces
- Marinated cherries - 8 pieces
- Orange Bell Peppers - 2 pieces
- Olive Oil - 6 tablespoons
- Salt - to taste
- Balsamic Vinegar - to taste
- Spanish onions - ½ head
- French Baguette - ½ piece
- Garlic - 1 clove
Step by Step guide
Step 1
Preheat the oven to 392°F. Slice the baguette into thin slices and place them on a baking sheet. Bake in the oven for 5 minutes until crispy. Let cool slightly and rub with garlic. Break into small pieces, generously drizzle with olive oil, and return to the oven for another 8–10 minutes, stirring occasionally. Bake until golden brown.

Cool on the baking sheet.
Step 3
Remove seeds from the peppers and cut into small pieces.
Step 4
Heat a skillet and add the remaining olive oil. Add the thinly sliced onion, sauté for 2 minutes, then add the beefsteak tomatoes cut into 8 pieces, halved cherry tomatoes, and peppers. Reduce the heat, cover, and cook for 20 minutes until all the liquid evaporates.
Step 5
Transfer to a bowl and cool to room temperature. Add the garlic croutons and serve.
