Ingredients
- Porcini Mushrooms - 12.3 oz
- Paccheri Pasta - 14.1 oz
- Shallot - 2 heads
- Baking Tomatoes - 12.3 oz
- Garlic - 1 clove
- Olive Oil - 4 spoons
- Dry White Wine - 5 fl oz
- Parsley - 1 bunch
- Rosemary - 1 stalk
- Chopped Sage Leaves - 3 pieces
- Grated Pecorino Pepato Cheese - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Clean the mushrooms to remove any dirt, slice the stems into thin pieces, and chop the caps into large cubes.
Step 2
Chop the shallots and sauté them in olive oil along with rosemary, sage, and parsley. After a few minutes, add the mushroom stems to the pan, and after a minute, pour in 120 ml of wine and the tomatoes, seasoning with pepper.
Step 3
Leave the sauce on a very low heat for half an hour. Then add a bit more wine, a little water, and the mushroom caps, and continue to cook on low heat until ready.
Step 4
Cook the pappardelle in boiling salted water. Toss the pasta with the sauce, sprinkle with grated cheese, and serve.
