Pappardelle with Caramelized Onions and Parmesan
Ingredients
- Olive Oil - 1 tablespoon
- Onion - 2 heads
- Coarse Salt - to taste
- Dried Chamomile - ½ teaspoon
- Ground Black Pepper - to taste
- Paccheri Pasta - 8.8 oz
- Butter - 1 tablespoon
- Parmesan Cheese - 2.1 oz
Step by Step guide
Step 1
In a large skillet, heat the olive oil over medium heat. Add the sliced onions and thyme. Season with salt and pepper. Cover and cook without stirring for 5 minutes. Uncover and stir, browning for 25–30 minutes. Once the bottom of the skillet starts to brown, add a little water and stir with a wooden spoon.
Step 2
Meanwhile, in a pot of boiling salted water, cook the pasta until al dente. Drain, reserving 0.5 cup of the water. Return the pasta to the pot.
Step 3
Add the caramelized onions and butter to the pasta, season with salt and pepper. Toss and add water to achieve the desired consistency. Serve topped with flakes of Parmesan.
