- Semolina - 3.5 oz
- Wheat Flour - 3.5 oz
- Chicken Egg - 1 piece
- Olive Oil - 1 fl oz
- Garlic - 0.2 oz
- Porcini Mushrooms - 2.5 oz
- Tomatoes - 1.1 oz
- Apple Wine - 1 fl oz
- Demi-Glace Sauce - 0 fl oz
- Mushroom seasoning - 0 fl oz
- Parsley - 0.2 oz
- Grated Pecorino Pepato Cheese - 0.4 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
For the dough, mix wheat flour, semolina, and egg until smooth. Roll out the dough and cut it into pappardelle using a knife or a pasta machine.
Step 2
Sauté finely chopped garlic in olive oil. Add porcini mushrooms. Sauté for 2-3 minutes. Add tomatoes, salt, pepper, and white wine. When the white wine evaporates, add demi-glace sauce, mushroom broth, and parsley.
Step 3
Cook the pasta for 3 minutes.
Step 4
Mix the pasta with the sauce. Add parmesan and a little olive oil. Mix well.
Step 5
Plate the pasta and serve immediately.
