Pappardelle with Sausages, Tomatoes, Mushrooms, and Basil

Ingredients

  • Sausages - 2 lbs
  • Olive Oil - 3 tablespoons
  • Fresh Mushrooms - 24 oz
  • Onion - 7.4 oz
  • Fresh basil leaves - 7.4 oz
  • Fresh basil leaves - 0.7 oz
  • Garlic - 6 cloves
  • Dry White Wine - 8 fl oz
  • Tomatoes - 4 pieces
  • Butter - 2 tablespoons
  • Baking Tomatoes - 2 lbs
  • Paccheri Pasta - 21.2 oz
  • Grated Pecorino Pepato Cheese - 4.6 oz

Step by Step guide

Step 1

Break the sausages and place them in a preheated skillet. Sauté over medium heat for about 12 minutes until browned. Use a slotted spoon to transfer to a large bowl.

Step 2

In the skillet with the fat, add olive oil and the chopped mushrooms and finely chopped onion. Sauté until soft and golden, about 15 minutes.

Step 3

Add 240 ml of chopped basil, oregano, and minced garlic. Cook for another minute.

Step 4

Pour in the wine and cook for 4 minutes.

Step 5

Then add the sausages and canned tomatoes, cover with a lid, and simmer over medium heat for about 25 minutes.

Step 6

Finely chop the fresh tomatoes and add them to the sausages. Then add the butter and simmer for another 15 minutes until the tomatoes are soft. Season with salt and pepper.

Step 7

Cook the pasta in a large pot of boiling salted water until al dente. Drain and return to the pot. Top with the sausage sauce and mix well. Add 120 g of grated cheese and the remaining basil. Season with salt and pepper and transfer to a serving dish. Sprinkle with the remaining cheese on top.
