Ingredients
- Tilapia - 2 pieces
- Parmesan Cheese - 1.8 oz
- Paprika - to taste
- Wild Garlic Greens - ⅓ bunch
- Olive Oil - 2 tablespoons

Step 1
First, prepare the coating. Grate the Parmesan cheese finely. Also chop the herbs. This can be wild garlic (like I used), parsley, cilantro, dill, or any combination you prefer.
Step 2
Next, in a wide bowl with edges, mix the Parmesan, herbs, and paprika. You can certainly add your own spices and substitute some paprika with hot chili.
Step 3
Brush the fillets with olive oil, then coat them in the mixture, pressing down on the fish each time.
Step 4
Place the coated fillets on parchment paper on a baking sheet. Bake for about 20 minutes at 356°F.
Step 5
Let the cooked fish rest for a bit so the Parmesan crust can set well. Then transfer to plates and serve.
