Ingredients
- Coarse Salt - to taste
- Parsley - 2 bunches
- Olive Oil - 2 fl oz
Step by Step guide
Step 1
Remove the leaves from the parsley.
Step 2
Bring salted water to a boil in a pot. Add the parsley leaves, reserving 2 tablespoons. Boil for about 20 seconds, then quickly transfer to ice water.
Step 3
Drain and transfer to a blender. Blend until smooth.
Step 4
Transfer the puree to a cheesecloth folded in several layers and squeeze out the juice.
Step 5
In a bowl, mix the parsley juice, olive oil, and a little salt.
Step 6
Pour into a bottle and add the reserved fresh parsley leaves. Store in the refrigerator.
