Ingredients
- Green Tagliatelle Pasta - 14.1 oz
- Fresh basil leaves - 1½ cups
- Marinated cherries - 21 pieces
- Balsamic Vinegar - ¼ cup
- Pizza Mozzarella Cheese - 6.3 oz
- Salt - to taste
- Olive Oil - 5 tablespoons
- Pistachios - 6 tablespoons
- Garlic - 2 cloves
- Ground Black Pepper - a pinch
Step by Step guide
Step 1
Cook the pasta in salted water until al dente and drain.
Step 2
Prepare the pesto: crush basil, pine nuts, garlic (if asafoetida is available, it can be used instead of garlic), and olive oil in a mortar until it reaches a paste-like consistency. It should yield about half a cup (for 4 servings). Add balsamic vinegar to it.
Step 3
Mix the basil, quartered cherry tomatoes, large pieces of mozzarella, pesto, and pasta together, and season with salt and pepper to taste.
