- Tomatoes - 3 pieces
- Olive Oil - 8 tablespoons
- Ground Black Pepper - to taste
- Sugar - 2 teaspoons
- Artichoke bottoms - 6 pieces
- Onion - 2 heads
- Capers - 1 tablespoon
- Passata Tomato Sauce - 3.5 oz
Step by Step guide
Step 1
Preheat the oven to 356°F. Slice the tomatoes into half-moons and place them in a baking dish. Drizzle with 5 tablespoons of olive oil, sprinkle with sugar, salt, and pepper. Bake for 20 minutes.
Step 2
Cook the pasta in salted water until al dente.
Step 3
Peel the onion and artichokes, chop the onion, and dice the artichokes. Sauté the artichokes and onion in 3 tablespoons of olive oil until the vegetables are soft. Add the tomatoes, capers, olives, and thyme, and season with pepper. Mix the vegetables with the pasta and drizzle with olive oil.
