Ingredients
- Beetroot - 2 lbs
- Garlic - 1 clove
- Orange juice concentrate - ¼ cup
- Olive Oil - 2 tablespoons
- Ground coriander - ½ teaspoon
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Gemelli pasta - 17.6 oz
- Blue Cheese - 6 oz
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
Place the beetroot in a baking dish, pour in 0.5 cup of water, cover with foil, and bake in the oven for 45 minutes to 1 hour until tender. Let cool, peel, and cut into small pieces. Transfer to a large bowl.
Step 3
Add the minced garlic, orange juice, olive oil, and coriander to the beetroot. Season with salt and pepper. Mix well.
Step 4
Cook the pasta in boiling salted water until al dente. Drain, reserving 1 cup of the water. Return the pasta to the pot and add half of the crumbled cheese and the reserved water, stirring to coat the pasta with the sauce. Season with salt and pepper.
Step 5
Divide the pasta among plates, top with the beetroot, and sprinkle with the remaining cheese. Serve immediately.
