Pasta with Broccoli and Red Pepper
Ingredients
- Pasta (corkscrew) - 10.6 oz
- Orange Bell Peppers - 1 piece
- Broccoli - 10 pieces
- Ocean salt - a pinch
- Ground Black Pepper - to taste
- Chopped almonds - 1 cup
- Garlic - 1 clove
- Water - ¾ cup
- Meyer Lemon Juice - 1 tablespoon
- Dry yeast - 1 tablespoon
Step by Step guide
Step 1
For the sauce: combine walnuts, garlic, yeast, add salt, season with lemon juice, and blend everything until smooth.
Step 2
Cook the pasta in salted water according to the package instructions.
Step 3
Heat a skillet over medium heat, add 1 tablespoon of water, and add the chopped bell pepper. Cook, stirring, for 7 minutes. Add broccoli, a couple more tablespoons of water, and cook covered for another 3-5 minutes. Remove the skillet from heat.
Step 4
Mix the pasta with the vegetables and serve immediately.
